2022 Cabernet Sauvignon dry

Ingredients

• 1200 gleg of lamb
• 3 sprigsrosemary
• 3 sprigsthyme
• 4 piecesgarlic cloves
• 50 gbreadcrumbs
• 40 gbutter
• 2 piecescarrots
• 150 gceleriac
• 2 tbsptomato paste
• 500 mlbeef stock
• 3 tbspolive oil
• 1 tspsalt
• 1 tsppepper

Preparation

1. 1Peel the vegetables and dice them finely, then finely chop two cloves of garlic.
2. 2Season the leg of lamb with salt and pepper and sear it on all sides in hot olive oil in a roasting pan.
3. 3Remove the meat, roast the vegetables with the tomato paste, and deglaze with the stock.
4. 4Return the meat to the roasting pan, cover, and braise at 160 degrees for about 90 minutes.
5. 5For the crust, mix the butter with the herbs, remaining garlic, and breadcrumbs.
6. 6Remove the leg of lamb from the cooking liquid, coat with the crust, and broil at 200 degrees until golden brown.
7. 7Strain the roasting juices, reduce them, season to taste, and serve as a sauce with the meat.
