2024 Rosé

Ingredients

• 800 gWatermelon (flesh)
• 200 gFeta
• 1 bunchMint (fresh)
• 1 pieceLime (juice)
• 3 tbspOlive oil (extra virgin)
• 0,5 pieceRed onion
• 1 pinchBlack pepper

Preparation

1. 1Peel the watermelon, remove any seeds, and cut the flesh into cubes roughly 2 cm in size.
2. 2Drain the feta cheese and either cut into small cubes or crumble coarsely over the melon with your fingers.
3. 3Peel the red onion, halve it, and slice into extremely fine strips or rings.
4. 4Wash the mint leaves, shake dry, pluck from the stems, and slice into fine strips.
5. 5For the dressing, whisk together the lime juice and olive oil in a small bowl until smooth.
6. 6Gently toss the melon cubes, onions, and mint together in a large bowl.
7. 7Arrange the salad on plates, sprinkle with the feta, and drizzle the lime dressing evenly over the top.
8. 8Finally, season with a pinch of freshly ground black pepper and serve chilled immediately.
